Regarding copyright act can I take a photo of commercial products such as (dolls,jewelry) and sell them?

I am in Canada. but if you have information about the copyright act in other countries, it could be the same.
Actually I want to use the photos in a commercial software.

No you can not. The reason is that you want to make money off the photos. Barbie is owned by Mattel and has all rights to its look and commercial use. Now if you photograph generic jewelry, something that looks like all the rest, you will be okay. Answer 3
